You may have heard conflicting information about whether eggs are good for you or not. Eggs have a higher amount of cholesterol than other foods so many people have strayed away from eggs to avoid raising blood cholesterol levels.

One egg per day is a healthy amount. If you want more than one egg you can always add egg whites to bulk up the amount of egg.

Eggs are a great source of protein; there are 6 grams of protein in one large egg with all nine essential amino acids. Another benefit is that eggs have choline, which helps with cell activity in the liver and brain. Eggs are also carbohydrate and sugar free which makes them good for breakfast to help sustain energy.

Dyed Easter eggsTo keep eggs fresh always refrigerate and place in the back of the refrigerator, not in the door to avoid temperature changes. Eggs can usually be kept up to 3 weeks after purchase. After a month eggs will lose their freshness. Do not eat cracked eggs because bacteria can contaminate the egg. If you dye eggs for Easter, they should be hard boiled. They should be discarded if left out for more than 2 hours.
